If you're editing the setting.ini file manually, these are the color keys. Documentation from HitCoder.

Code:
COLOR_PIANO1 and COLOR_PIANO2 are white and black piano notes on the left respectively
COLOR_ROLL1, COLOR_ROLL2 are the white and black notes on the actual roll
COLOR_SEPA1, COLOR_SEPA2 are the vertical separators. 1 is bars, 2 is beats
COLOR_BACK is the colour at the very top where the tempo numbers are next to the VB name
COLOR_FORE is the octave horizontal divider
COLOR_SHADOW is the horizontal seps
COLOR_NOTE_NOR is non-selected note background
COLOR_NOTE_TOP is the TOP OF THE SELECTION - the first note.
COLOR_NOTE_SEL is the bg color of selected notes
COLOR_NOTE_TNOR, TTOP, TSEL, is the text on every type of note above in order.
COLOR_NOTE_RNOR, RTOP and RSEL are rests of the same order
COLOR_PTCH_SEL is selected notes pitchbend color
COLOR_PTCH NOR is pitchbend color for non selected notes
COLOR_TEMPO_NOR and COLOR_TEMPO_ALL are tempo marker text colors
COLOR_PITCH_NOR ???
COLOR_SELECTBAR and COLOR_HILIGHT are something to do with the highlight/select bar at the top

If you're using UTAU Colors, you can set the value to another color (for example, bright red) and see what changes in the preview.
